Damper is a traditional Australian bread that has been enjoyed for generations. Originally made by early Australian settlers and Indigenous Australians, damper was a staple food because it was easy to prepare with basic ingredients. It was often cooked over an open fire, making it perfect for the Australian bush.

As we celebrate NAIDOC Week, it’s important to recognize and honor the rich cultural heritage of Aboriginal and Torres Strait Islander peoples. NAIDOC Week is a time to learn about and celebrate their history, culture, and achievements. What better way to connect with this tradition than by baking our very own damper? It’s a fun and easy activity that kids will love, and it’s a great way to bring a taste of history into our homes.

BUSH KINDY DAMPER RECIPE

  • 450g (3 cups) self-raising flour
  • Pinch of salt
  • 80g butter, chilled and cubed
  • 185ml (3/4 cup) water

INSTRUCTIONS:

Ask an adult to help you preheat the oven to 200°C.

Mix Dry Ingredients:
Put the flour and a pinch of salt into a big bowl.
Add Butter:
Add the small butter cubes to the flour. Use your fingers to mix it all together until it looks like breadcrumbs.
Add Water:
Make a hole in the middle of the flour mix. Pour in the water and stir with a butter knife until it turns into dough.
Knead the Dough:
Put some flour on the table. Place the dough on it and gently knead it for about a minute until it’s smooth.
Shape the Dough:
Shape the dough into a round loaf. Place it on a baking tray with baking paper.
Make a Cross:
Use a knife to gently cut a cross on the top of the dough.
Bake:
Ask an adult to put the tray in the oven. Bake for 30 minutes until it’s golden brown.
Cool and Eat:
Let the damper cool down a bit. Enjoy with butter or jam!
